A Knoxville resident and owner of Iowa’s first licensed ‘micro-dairy’ continues to get acclaim for her unique goat-cheese. Lois Reichert, owner of Reichert’s Dairy Air south of Knoxville, tells KNIA/KRLS News that her Italian-style goat cheese, “Robiola” made the elite cheese list for the trendy ‘Bin 36’ restaurant in Chicago, and she plans to expand into many other Chicago restaurants. Reichert says she conatantly strives for quality, and is growing her production: she is getting a new pasteurizer and plans to add more goats.
