As you get ready to prepare today’s Thanksgiving feast, Marion County Public Health wants everyone to remember some food safety tips. Public Health Assistant Director Diane Ellis says that healthy food starts with a clean kitchen. She says to make sure your counters have been washed before you start preparing food. Ellis adds that you should not only wash your hands before you start preparing the meal, but also between each preparation step. After the meal has been served, refrigerate the leftovers right away. Ellis says that any food left out over two hours risks being contaminated with dangerous bacteria.
